SPRING RECIPE
And finally the recipe of the month is a variation on an old risotto favourite - healthy spring dish full of greens, but even quicker to make by switching the rice for orzo.
Easy Spring Greens Orzotto
4 - 6 servings
Heat 2tbsp of extra virgin oil
Cook 2 shallots finely chopped until slightly softened
Add 3 garlic cloves, thinly sliced
1/2 tsp sea salt
Cook and stir often until softened and fragrant - about 3 minutes.
Add 1 lb of orzo until toasted and golden in spots (about 3 minutes)
Add 1 cup of dry white wine & 1/2 tsp of sea salt
Season with lots of freshly ground pepper and fresh herbs of your choice (we like parsley and or mint)
Stir often until the liquid is absorbed - about 2 minutes
Cook orzo add 5 cups of water - one cup at a time, waiting until absorbed before adding more - until almost tender - about 15 minutes
Add 6 oz. sugar snap peas, strings removed, thinly sliced, ½ cup frozen peas, thawed, and another ½ cup water; cook, stirring often, until vegetables are crisp-tender and orzo is cooked through, 2–3 minutes. (Orzotto will continue to thicken as it cools.) Stir until combined and melted. Taste and season with more salt and pepper if needed.
Remove from heat and add 1 oz of parmesan (finely grated, 4 tbsp of unsalted butter cut into small pieces and 3 tbsp fresh lemon juice.
Split into shallow bowls, stir in a little pesto and sprinkle with fresh herbs to garnish.
A fabulous quick and healthy spring meal. Perfect with a glass of chilled white wine.
