RECIPE
The recipe of the month is a healthy spring dish full of greens, very quick and easy and chosen by Jeanette who is the manager of our Ledbury shop.
Easy Spring Greens Risotto:
Cook a mixture of 400g of green beans, mange tout, asparagus, frozen peas in 1/3 pint of stock. After 4 minutes remove with a slotted spoon and set aside.
Cook a sliced and diced onion in a little butter and oil until soft.
Tip two bags of ready cooked plain rice into a saucepan and add some of the stock. Stir gently to heat the rice for 2 minutes then add the veg and oinion and stir for a minute. Sprinkle with Parmesan and flat leaf parsley and serve. So speedy fab for mid week supoer
